Zucchini Quick Bread

- Preheat oven to 350°F.
- Lightly grease and flour a 9 x 5-inch loaf pan; set aside.
- In a mixing bowl, whisk together flour, ground ginger, baking powder, and salt.
- In another bowl, combine sugar, oil, and eggs until well blended.
- Add shredded zucchini to the wet ingredients and mix well.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into the prepared loaf pan.
- Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
