Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon ground ginger
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/4 cup oil
  • 2 eggs
  • 1 cup shredded zucchini

Instructions

  1. Preheat oven to 350°F.
  2. Lightly grease and flour a 9 x 5-inch loaf pan; set aside.
  3. In a mixing bowl, whisk together flour, ground ginger, baking powder, and salt.
  4. In another bowl, combine sugar, oil, and eggs until well blended.
  5. Add shredded zucchini to the wet ingredients and mix well.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Pour the batter into the prepared loaf pan.
  8. Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
