Ingredients

  • 2 c. chopped zucchini
  • 1 c. chopped onion
  • 1/2 c. chopped sweet pepper
  • 1/2 c. chopped sweet red pepper
  • 2 Tbsp. salt
  • 1 3/4 c. sugar
  • 1 c. cider vinegar
  • 2 tsp. celery seed

Instructions

  1. Combine zucchini, onion, sweet pepper, and red pepper in a bowl.
  2. Sprinkle with salt and cover with cold water.
  3. Let stand for 2 hours.
  4. Drain vegetables and press out excess liquid.
  5. Combine remaining ingredients in a pot and bring to a boil.
  6. Add vegetables to the boiling mixture and simmer for 10 minutes.
  7. Pour hot relish into hot jars, leaving 1/4 inch headspace.
  8. Adjust jar caps securely.
  9. Process jars in boiling water bath for 10 minutes.
