Ingredients

  • 1/3 cup Bisquick
  • 1/4 cup Parmesan cheese
  • salt and pepper to taste
  • 2 eggs, beaten
  • 2 cups zucchini, shredded
  • 2 tablespoons butter or margarine

Instructions

  1. Mix Bisquick and Parmesan cheese together.
  2. Add beaten eggs to the mixture and stir until moistened.
  3. Fold shredded zucchini into the mixture.
  4. Melt butter or margarine in a skillet over medium heat.
  5. Drop 2 tablespoons of the mixture into the skillet for each round.
  6. Cook for 2 to 3 minutes on each side until golden brown.
