Ingredients

  • 3 eggs
  • 1 cup white sugar
  • 2 cups peeled, grated zucchini
  • 1 cup cooking oil
  • 1 cup brown sugar
  • 2 teaspoons vanilla
  • 3 cups flour
  • 1 teaspoon salt
  • 1/2 cup walnuts
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons cinnamon

Instructions

  1. Beat the eggs, white sugar, brown sugar, zucchini, cooking oil, and vanilla together well.
  2. Add the flour, salt, baking powder, and cinnamon to the mixture and combine.
  3. Pour the batter into 2 well-greased, floured loaf pans.
  4. Bake in a 350°F oven for 45 to 55 minutes.
  5. Allow the bread to cool, then wrap in wax paper when cold.
  6. To freeze, wrap the loaves in aluminum foil.
