A hearty zucchini stuffing with tender vegetables, savory stuffing, and creamy chicken soup topping, perfect for a comforting family dinner or potluck gathering.

Ingredients

  • 1 stick oleo
  • 3 cups chopped zucchini
  • 1 medium onion
  • 1 box Stove Top stuffing (chicken flavor)
  • 1 can cream of chicken soup
  • 1 small (8 oz.) sour cream

Instructions

  1. Melt margarine in a 2 1/2-quart casserole dish.
  2. Cook chopped zucchini and onion in a small amount of water until tender.
  3. Drain and place on top of melted margarine.
  4. Prepare stuffing according to the box instructions.
  5. Spread the prepared stuffing over the zucchini and onion mixture.
  6. Mix cream of chicken soup with sour cream until smooth.
  7. Spread the soup and sour cream mixture on top of the stuffing.
  8. Dot butter over the top.
  9. Bake at 350°F for 35 minutes.
