Ingredients

  • 2 Tbsp. all purpose flour
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. ground red pepper
  • 1 lb. boneless, skinless chicken breasts
  • 1 Tbsp. olive oil
  • 2 Tbsp. hot pepper sauce
  • 1 large bunch of celery
  • 1 large head romaine lettuce
  • 1 red delicious apple

Instructions

  1. Combine flour, salt, pepper, and ground red pepper in a shallow dish.
  2. Coat both sides of the chicken breasts with the flour mixture.
  3. Heat olive oil in a 12-inch non-stick skillet over medium heat.
  4. Stir in hot pepper sauce.
  5. Add chicken to the skillet and cook for 6-8 minutes per side until browned and cooked through.
  6. Transfer cooked chicken to a cutting board, cover loosely, and let stand for 5 minutes.
  7. Slice celery diagonally into 1/2 inch thick pieces.
  8. In a medium bowl, combine chopped romaine lettuce, celery, and apple eighths.
  9. Slice the chicken into 1/2 inch thick strips and add to the salad.
  10. Toss the salad with blue cheese dressing before serving.
