Ingredients

  • 8 oz. package cream cheese
  • 1 tsp. lemon juice
  • 3/4 cup chopped carrots
  • 1/4 cup cucumbers
  • 1/4 cup onion
  • 1/4 cup celery
  • 1/4 cup green pepper
  • 1/4 cup fresh parsley
  • sliced tomatoes

Instructions

  1. Put all vegetables except tomatoes in a food processor and process until fairly fine.
  2. Drain the processed vegetables well on paper towels.
  3. Mix the drained vegetables with cream cheese and lemon juice.
  4. Add mayonnaise to achieve the proper consistency.
  5. Take half a pita, add a couple of tomato slices, and fill with the vegetable spread.
  6. Optionally, add a slice of cheese in the pita sandwich.
