Ingredients

  • 1/4 onion, chopped
  • 1 clove garlic, minced
  • 2 medium zucchini
  • 1 tomato, diced
  • 1/4 cup Cheddar cheese, shredded
  • 1/4 cup Jack cheese, shredded

Instructions

  1. Saute chopped onion and minced garlic in butter until fragrant.
  2. Add quartered zucchini to the skillet and cook until tender.
  3. Add diced tomato and/or a can of chili with or without beans.
  4. Cover and simmer for 5 to 10 minutes.
  5. Add shredded Cheddar and Jack cheeses, cover, and let cheese melt before serving.
