  • 3/4 c. cream

  6. Reheat the meat in the sauce, but do not let it boil.
  7. Serve topped with chopped parsley.

Tips & Substitutions

For best results, use a high-quality veal and ensure it's sliced very thinly for quick cooking. If veal isn't available, chicken breast can be a good substitute. Adjust the cream for a lighter sauce, or use Greek yogurt for a tangy twist. Fresh herbs can elevate the dish; try thyme or tarragon in addition to parsley. Pair this with a side of buttery potatoes or noodles for a complete meal.

Serving Suggestions

Serve Zurich Geschnetzeltes over buttered noodles or alongside creamy mashed potatoes for a comforting meal. A fresh green salad with a light vinaigrette complements the richness of the dish. Pair it with a dry white wine, similar to the one used in cooking, to enhance the flavors. This dish also pairs beautifully with a Cheese Cake for dessert, creating a delightful dining experience.

Storage & Reheating

Leftover Zurich Geschnetzeltes can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, warm gently on the stove over low heat, adding a splash of cream or broth to maintain moisture. Avoid boiling to prevent the sauce from separating. You can also freeze it for up to a month; thaw in the refrigerator before reheating.

Frequently Asked Questions

Can I use beef instead of veal?

Yes, you can use thinly sliced beef as a substitute for veal in Zurich Geschnetzeltes. However, keep in mind that the flavor and texture will differ slightly. Opt for tender cuts such as sirloin or filet mignon, and adjust the cooking time accordingly to avoid overcooking.

What is the best type of wine to use?

A dry white wine, such as Sauvignon Blanc or Pinot Grigio, is ideal for this recipe. These wines add acidity and depth to the sauce. Avoid overly sweet wines, as they can alter the flavor profile of the dish. If you prefer a non-alcoholic option, use chicken broth or a mixture of vinegar and water.

Can I make this dish ahead of time?

While Zurich Geschnetzeltes is best enjoyed fresh, you can prepare the sauce ahead of time and store it separately. Reheat the sauce gently while adding the cooked veal just before serving. This allows the flavors to meld while ensuring the meat stays tender and juicy.
