Ingredients

  • 1 lb. smoked beef sausage
  • 2 Tbsp. butter
  • 1 medium onion
  • 1 large apple, peeled, cored and grated
  • 12 small red potatoes
  • 1 1/2 c. sauerkraut

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add the chopped onion and cook until tender.
  3. Add the grated apple, brown sugar, potatoes, and sauerkraut; mix well.
  4. Place the smoked beef sausage on top of the sauerkraut mixture.
  5. Cover the skillet and cook on medium-low heat for 30 minutes.
  6. Serve hot.
