A light, refreshing lemon dessert with a crunchy pecan crust, creamy filling, and lemon pudding topping, perfect for summer gatherings or casual entertaining.

Ingredients

  • 1 stick butter
  • 1/2 cup pecans
  • 1 cup flour
  • 1 Cool Whip
  • 2 packages instant lemon pudding
  • 3 cups cold milk
  • 1 small cream cheese

Instructions

  1. Combine butter, nuts, and flour to make the crust.
  2. Bake the crust for 15 minutes, then cool.
  3. In a bowl, mix cream cheese with powdered sugar and fold in most of the Cool Whip.
  4. Spread this mixture on the cooled baked crust.
  5. In a separate bowl, combine lemon pudding mix with cold milk and beat until thickened.
  6. Spread the pudding over the cream cheese layer.
  7. Top with the remaining Cool Whip.
  8. Sprinkle with additional pecans.
