7 Layer Mexican Casserole

A hearty layered casserole combining seasoned ground beef, tortillas, beans, and cheese, baked to perfection. Perfect for family dinners and Mexican flavor lovers.

Ingredients

  • 1 1/4 lb. hamburger
  • 8 to 10 corn tortillas
  • 1 can Mexi beans
  • 1/2 cup chopped onion
  • 1 can cream of chicken soup
  • 1 can tomatoes with chilies
  • Grated cheese

Instructions

  1. Brown and drain the hamburger.
  2. Season with salt and pepper and place in an 8 x 12-inch casserole dish.
  3. Cut the tortillas into 2-inch pieces and place on top of the meat.
  4. Drain the beans and pour over the tortillas.
  5. Sprinkle with chopped onion and cover with grated cheese.
  6. Mix together the cream of chicken soup and tomatoes with chilies and heat.
  7. Pour the soup mixture over the layered ingredients.
  8. Sprinkle with additional cheese if desired.
  9. Bake covered at 350°F for 45 minutes.
