Creamy, cheesy Pronto Enchiladas feature seasoned ground beef rolled in tortillas, topped with cheese and salsa, baked to perfection—ideal for a comforting family meal or casual gathering.

Ingredients

  • 1 lb ground beef
  • 1 can cream of chicken soup
  • 1 can Ro-Tel
  • 8 (8-inch) flour tortillas
  • 1 (8 oz) package shredded Colby-Jack cheese
  • 1 can Cheddar cheese soup
  • salsa
  • sour cream

Instructions

  1. Cook ground beef in a large skillet; drain excess fat.
  2. Stir in cream of chicken soup and half of Ro-Tel tomatoes.
  3. Spoon 1/2 cup of beef mixture down the center of each tortilla.
  4. Sprinkle each tortilla with 2 1/2 tablespoons of shredded cheese.
  5. Roll up tortillas and place seam side down in a lightly greased 9x13 inch baking dish.
  6. Pour cheese soup over the rolled tortillas.
  7. Sprinkle remaining Ro-Tel tomatoes and cheese over the top.
  8. Bake covered at 350°F for 20 minutes.
  9. Uncover and bake for an additional 5 minutes.
  10. Serve with salsa and sour cream.
