Pronto Enchiladas
Creamy, cheesy Pronto Enchiladas feature seasoned ground beef rolled in tortillas, topped with cheese and salsa, baked to perfection—ideal for a comforting family meal or casual gathering.

Instructions
- Cook ground beef in a large skillet; drain excess fat.
- Stir in cream of chicken soup and half of Ro-Tel tomatoes.
- Spoon 1/2 cup of beef mixture down the center of each tortilla.
- Sprinkle each tortilla with 2 1/2 tablespoons of shredded cheese.
- Roll up tortillas and place seam side down in a lightly greased 9x13 inch baking dish.
- Pour cheese soup over the rolled tortillas.
- Sprinkle remaining Ro-Tel tomatoes and cheese over the top.
- Bake covered at 350°F for 20 minutes.
- Uncover and bake for an additional 5 minutes.
- Serve with salsa and sour cream.
