Ingredients

  • 1/2 lb. fettuccini
  • 2 c. heavy cream
  • 1/2 tsp. chopped garlic
  • 2 medium shallots
  • 1 Tbsp. olive oil
  • 1 (8 to 10 oz.) chicken breast
  • 1/2 lb. broccoli florets
  • 1/4 lb. almond slivers
  • 1/4 c. white wine
  • 1 tsp. olive oil
  • 1/4 c. flour

Instructions

  1. Cut broccoli into florets.
  2. Boil broccoli for 2 minutes until soft but still green.
  3. Drain and transfer to ice water; set aside.
  4. Spread almond slivers on a cookie sheet and toast in a 350°F oven until golden.
  5. Heat 1 tablespoon olive oil in a nonstick sauté pan over medium-high heat until just smoking.
  6. Dust chicken strips with flour and add to the pan away from you.
  7. Cook chicken until browned, then turn and cook the other side.
  8. Remove chicken from pan, discard oil, and wipe pan clean.
  9. Return pan to stove, add 1 teaspoon olive oil and chopped shallots or onion.
  10. Cook until translucent.
  11. Add chopped garlic and cook for a moment without browning.
  12. Pour in white wine or chicken stock, reduce by half, then add heavy cream.
  13. Stir occasionally over low heat until sauce thickens enough to coat a wooden spoon.
  14. Add cooked chicken, steamed broccoli, and toasted almonds; let simmer for 1 minute.
  15. Season with salt and pepper to taste.
  16. Add cooked, cooled fettuccini and toss lightly until pasta is heated through.
  17. Transfer to a serving dish, sprinkle with cheese, and serve.
