- In a large skillet, cook the tortilla strips in butter until golden brown. Remove and set aside.
- Add diced onion to the skillet and cook until tender.
- Drain the stewed tomatoes and reserve the liquid.
- Add the tomato liquid to the skillet.
- Cover and cook on high heat for 3 minutes, stirring frequently.
- Stir in the cooked ham or turkey, stewed tomatoes, and green pepper strips.
- Heat through.
- Reduce heat to low, add the cooked tortillas and eggs to the skillet.
- Cover and cook for 4 to 6 minutes or until the eggs are set.
- Sprinkle shredded Monterey Jack cheese over the top.
- Cover and let sit for 1 minute until the cheese melts.
