Ingredients

  • 3 corn tortillas
  • 3 Tbsp. butter or margarine
  • 1/2 c. diced onion
  • 1 (14 1/2 oz.) can stewed tomatoes
  • 1 c. cooked julienne strips ham or turkey
  • 1/2 c. green pepper strips
  • 6 eggs
  • 3/4 c. shredded Monterey Jack cheese

Instructions

  1. In a large skillet, cook the tortilla strips in butter until golden brown. Remove and set aside.
  2. Add diced onion to the skillet and cook until tender.
  3. Drain the stewed tomatoes and reserve the liquid.
  4. Add the tomato liquid to the skillet.
  5. Cover and cook on high heat for 3 minutes, stirring frequently.
  6. Stir in the cooked ham or turkey, stewed tomatoes, and green pepper strips.
  7. Heat through.
  8. Reduce heat to low, add the cooked tortillas and eggs to the skillet.
  9. Cover and cook for 4 to 6 minutes or until the eggs are set.
  10. Sprinkle shredded Monterey Jack cheese over the top.
  11. Cover and let sit for 1 minute until the cheese melts.
