Ingredients

  • 1 Tbsp. flour
  • 1/2 c. sugar
  • 2 Tbsp. instant tapioca
  • 1 8 oz. can crushed pineapple drained
  • 4 apples cored and chopped
  • 2 c. unsalted peanuts
  • 1 8 oz. frozen whipped topping thawed
  • 2 Tbsp. cider vinegar

Instructions

  1. In a medium saucepan, stir together flour, sugar, tapioca, vinegar, and reserved pineapple juice.
  2. Cook over medium heat until thickened, stirring constantly. Remove from heat and chill.
  3. In a large bowl, combine the drained pineapple, chopped apples, peanuts, and chilled tapioca mixture.
  4. Fold in the thawed whipped topping and chill for at least one hour before serving.
