  2. Add the thinly sliced potatoes and the chicken stock.
  3. Cover and cook on a low heat for about 25 minutes.
  4. Add the new potatoes and cook for about 20 minutes more or until the chicken and new potatoes are tender.
  5. Remove the chicken pieces and new potatoes and work the stock through a sieve.
  6. Return the strained stock to the casserole.
  7. Season to taste with salt, pepper, and optional cumin seeds.
  8. Add the cooked chicken, potatoes, corn ears, and capers.

Tips & Substitutions

For a richer flavor, consider browning the chicken pieces more before adding the onions. You can substitute the new potatoes with Yukon Gold or fingerling potatoes if needed. If you prefer a creamier soup, add more cream at the end. Optional cumin seeds can enhance the depth of flavor, similar to how they are used in Pollo Encaldo Chicken Soup.

Serving Suggestions

Serve Ajiaco De Pollo Bogotano in deep soup plates, garnishing with fresh avocado sauce on the side for a creamy contrast. This dish pairs beautifully with crusty bread or a light salad. For an added twist, consider serving it with a dollop of sour cream or a sprinkle of fresh herbs.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. When reheating, gently warm the soup on the stove over low heat, stirring occasionally to maintain the texture. Avoid boiling to prevent the potatoes from breaking down too much.
