Ingredients

  • 1 lb. lean pork, cubed
  • 2 Tbsp. oil
  • 1 small pepper, chopped
  • 1 small onion, minced
  • 1 c. celery, diced
  • 1 can stewed tomatoes
  • 1 small can tomato sauce
  • 1 can chicken broth
  • 2 Tbsp. flour
  • 1/2 tsp. chili powder
  • 1 tsp. salt
  • 1/2 tsp. basil
  • 1/2 tsp. oregano
  • 1/2 tsp. garlic powder
  • 1/2 tsp. black pepper

Instructions

  1. Heat oil in a heavy pot and slowly sauté the cubed pork, chopped pepper, minced onion, and diced celery for 10 minutes.
  2. Sprinkle the flour over the mixture and blend in thoroughly.
  3. Add the seasoning, stewed tomatoes, tomato sauce, and chicken broth to the pot.
  4. Cook slowly for 30 minutes, stirring frequently.
  5. Serve the Pork Creole over hot rice.
