Ingredients

  • 1 (1 oz.) pkg. Ranch dressing mix
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 (9-inch) pan cornbread, crumbled
  • 2 (16 oz.) cans pinto beans, drained
  • 3 large tomatoes, chopped
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped green onions
  • 2 cups (8 oz.) shredded Cheddar cheese

Instructions

  1. Combine the ranch dressing mix, sour cream, and mayonnaise in a bowl. Set aside.
  2. Place half of the crumbled cornbread in a large serving bowl.
  3. Top with half of the drained pinto beans.
  4. In a medium bowl, mix the chopped tomatoes, green pepper, and green onions.
  5. Layer half of this vegetable mixture over the beans.
  6. Add half of the shredded Cheddar cheese on top.
  7. Repeat the layers with the remaining cornbread, beans, vegetable mixture, and cheese.
  8. Garnish as desired before serving.
