Ingredients

  • 15 oz. can whole kernel corn, drained
  • 5 oz. package yellow rice with saffron
  • 10 3/4 oz. can mushroom soup
  • 2.5 oz. jar pimentos
  • small bell pepper, chopped
  • small bunch green onions, chopped
  • 1 cup shredded sharp cheese
  • 1/2 stick oleo

Instructions

  1. Cook rice according to package directions.
  2. Add drained whole kernel corn and mushroom soup to the cooked rice.
  3. Saute chopped pimentos, chopped green onions, and chopped bell pepper.
  4. Add the sautéed vegetables to the corn and rice mixture.
  5. Transfer the mixture to a casserole dish and sprinkle shredded sharp cheese on top.
  6. Bake at 350°F for about 30 minutes until cheese is melted and bubbly.
