Alligator Meatballs

Ingredients

  • 1 lb. chopped alligator meat
  • 1 egg
  • 1 Tbsp. finely chopped onion
  • 2 Tbsp. finely chopped celery
  • 1 Tbsp. finely chopped parsley
  • 2 tsp. lemon pepper
  • 1/2 tsp. salt
  • 1/4 tsp. bread crumbs
  • flour to dredge
  • 1 c. cooking oil
  • 2 Tbsp. finely chopped shallots

Instructions

  1. Combine all ingredients, form into 1-inch balls.
  2. Allow to set for 1 hour.
  3. Dredge with flour and fry until brown.
  4. Serve hot.
