Ingredients

  • 4 1/2 cups water
  • 2 envelopes dehydrated chicken noodle soup
  • 1 cup rice
  • 2 pounds sausage
  • 1 1/2 cups chopped celery
  • 1 medium onion, chopped
  • 1/2 cup chopped green peppers

Instructions

  1. In a large saucepan, bring water and dehydrated chicken noodle soup to a boil.
  2. Add rice, cover, reduce heat, and boil for 25 minutes or until all water is absorbed.
  3. Remove from heat.
  4. Fry sausage until browned.
  5. Remove meat and pour off excess fat.
  6. Add chopped celery, chopped onion, and chopped green peppers to the remaining fat in the pan; cover and cook until tender and crisp.
  7. Add cooked rice, sausage, and 1/2 cup of almonds to the vegetables; mix well.
  8. Pour the mixture into a 2-quart baking dish.
  9. Sprinkle remaining almonds over the top.
  10. Bake at 350°F for 30 minutes or until heated thoroughly.
