Ingredients

  • 1 bottom round roast
  • 1 lb. frozen carrots
  • 1 lb. frozen mixed American vegetables
  • 1 pepperoni stick
  • 2 large onions
  • 1 clove garlic
  • 2 Tbsp. oil
  • 1 pkg. vegetable soup mix
  • Mrs. Dash
  • pepper
  • A.1. sauce

Instructions

  1. Make four deep slits in the bottom round roast with a large knife.
  2. Cut four pieces of pepperoni and push them into the slits in the roast.
  3. Cut slits in the roast and insert slices of garlic into the slits.
  4. Season the meat with Mrs. Dash, pepper, A.1. sauce, and teriyaki barbecue marinade sauce.
  5. Let the seasoned roast sit in the refrigerator overnight.
  6. Heat oil in a roasting pot.
  7. Brown the roast on all sides in the hot oil.
  8. Cover half of the roast with water in the pot.
  9. Add sliced onions to the pot.
  10. Cook on low heat for 1 hour.
  11. Then cook on high heat for 30 minutes.
  12. Add the vegetable soup mix and frozen vegetables to the pot.
  13. Continue cooking for another 30 minutes.
  14. Remove the meat from the pot and drain the juice from the vegetables.
  15. Make gravy using the drained vegetable juice.
  16. Serve the meat with vegetables and gravy over rice.
