Ingredients

  • 1 c. water
  • 4 Tbsp. agar flakes
  • 1 c. blanched almonds
  • 1/4 c. pimento
  • 3 Tbsp. flake yeast
  • 1 tsp. salt
  • 1 tsp. onion powder
  • 1/4 tsp. garlic powder
  • 1/4 tsp. dried dill
  • 1/4 c. oil
  • 3 Tbsp. lemon juice

Instructions

  1. Bring water and agar flakes to a boil, stirring constantly until agar is dissolved.
  2. Set the agar water aside to cool slightly.
  3. Blend the blanched almonds with a little of the agar water until a creamy texture is achieved.
  4. Add the pimento, nutritional yeast, salt, onion powder, garlic powder, and dried dill if using.
  5. If using oil, add it slowly while blending until fully incorporated.
  6. Scrape down the sides of the blender occasionally to ensure even mixing.
  7. Add the lemon juice while blending until well mixed.
  8. Pour the mixture into plastic containers and refrigerate until firm and spreadable.

Tips & Substitutions

For a creamier texture, soak the blanched almonds in water for a few hours before blending. If you don't have agar flakes, you can substitute with agar powder, using about one-third of the amount. Nutritional yeast can be replaced with a vegan cheese alternative if desired. Adjust the seasoning to taste, especially if you prefer a stronger garlic or onion flavor.

Serving Suggestions

This Almond Pimento Spread is perfect for serving on crusty bread or crackers. It pairs beautifully with a fresh Ensalada De Naranjas(Orange Salad) or alongside Garlic Roasted New Potatoes for a delightful appetizer spread. Consider adding some fresh herbs or a sprinkle of paprika on top for added flavor and garnish.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to one week. The spread can be kept firm and spreadable by ensuring it is well sealed. To serve after refrigeration, allow it to sit at room temperature for a few minutes to soften slightly before spreading.
