Rich, buttery almond roca bars feature a crunchy cookie base topped with melted chocolate and sprinkled with chopped almonds, perfect for sharing at gatherings or as a sweet treat.

Ingredients

  • 1 cup butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups flour
  • 2 (7 oz.) sweet chocolate bars
  • 1 cup finely chopped almonds

Instructions

  1. Cream butter, sugar, brown sugar, egg, vanilla, and flour together until well mixed.
  2. Spread the dough evenly in a 10 x 14-inch pan.
  3. Bake at 350°F (175°C) for 15 to 20 minutes until golden.
  4. Remove from oven and break the chocolate bars into sections; place on top of the hot crust.
  5. Return to the oven with the heat turned off and leave for a few minutes to soften the chocolate.
  6. Spread the softened chocolate evenly over the crust.
  7. Sprinkle the finely chopped almonds on top.
  8. Allow to cool completely, then cut into squares.
