Ingredients

  • 2 lb. small summer squash, sliced
  • 1/4 c. water
  • 1/3 c. chopped onion
  • 1/4 c. butter or margarine
  • 1 Tbsp. flour
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/8 tsp. oregano
  • 1 c. sour cream
  • 1/4 c. sliced almonds
  • chopped parsley or chives

Instructions

  1. Bring the sliced squash to a boil in water; cook covered until tender. Drain.
  2. Saute chopped onion in butter until tender.
  3. Add flour, salt, pepper, oregano, sour cream, and sliced almonds to the onion; heat thoroughly.
  4. Pour the mixture over the cooked squash and mix well.
  5. Transfer to a casserole dish and bake at 350°F for 15 to 20 minutes.
  6. Before serving, sprinkle with chopped parsley or chives.
