- Preheat the oven to 350°F (175°C). Spray a Bundt pan with non-stick spray.
- In a large bowl, mix all the dry ingredients: whole wheat flour, unbleached flour, sugar, chopped walnuts, cinnamon, baking soda, and baking powder.
- In a separate bowl, whisk together all the wet ingredients: egg whites, applesauce, and buttermilk.
- Add the wet mixture to the dry ingredients and stir until just combined.
- Fold in the grated zucchini.
- Pour the batter into the prepared Bundt pan and smooth the top.
- Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
