Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups unbleached flour
  • 1 1/4 cups sugar
  • 1/2 cup chopped walnuts
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 6 egg whites
  • 1 cup applesauce
  • 1/2 cup buttermilk
  • 2 1/2 cups grated zucchini

Instructions

  1. Preheat the oven to 350°F (175°C). Spray a Bundt pan with non-stick spray.
  2. In a large bowl, mix all the dry ingredients: whole wheat flour, unbleached flour, sugar, chopped walnuts, cinnamon, baking soda, and baking powder.
  3. In a separate bowl, whisk together all the wet ingredients: egg whites, applesauce, and buttermilk.
  4. Add the wet mixture to the dry ingredients and stir until just combined.
  5. Fold in the grated zucchini.
  6. Pour the batter into the prepared Bundt pan and smooth the top.
  7. Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
