Ingredients

  • 3 lb. potatoes, peeled and quartered
  • 8 oz. sharp Cheddar or Colby cheese, shredded
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 c. butter
  • 6 c. sliced onions
  • 1 (12 oz.) box jumbo stuffing shells, cooked and drained

Instructions

  1. Cook potatoes in boiling water until tender.
  2. Drain and return to the pot.
  3. Add shredded cheese to hot potatoes and mash until smooth.
  4. Add salt and pepper to taste.
  5. Melt butter in a large skillet and add sliced onions.
  6. Cook onions for 15 minutes until tender and caramelized.
  7. Preheat oven to 350°F and prepare two 13 x 9-inch baking dishes.
  8. Spread half of the onions over the bottom of each baking dish.
  9. Stuff cooked stuffing shells with the mashed potato mixture.
  10. Arrange the stuffed shells over the onions in the baking dishes.
  11. Spread the remaining onions over the top of the shells.
  12. Bake uncovered for 15 to 20 minutes until heated through and slightly browned.
