Almost-Instant Pierogi

- Cook potatoes in boiling water until tender.
- Drain and return to the pot.
- Add shredded cheese to hot potatoes and mash until smooth.
- Add salt and pepper to taste.
- Melt butter in a large skillet and add sliced onions.
- Cook onions for 15 minutes until tender and caramelized.
- Preheat oven to 350°F and prepare two 13 x 9-inch baking dishes.
- Spread half of the onions over the bottom of each baking dish.
- Stuff cooked stuffing shells with the mashed potato mixture.
- Arrange the stuffed shells over the onions in the baking dishes.
- Spread the remaining onions over the top of the shells.
- Bake uncovered for 15 to 20 minutes until heated through and slightly browned.
