- If boneless chops are especially thick, cut them in half to make two chops.
- With a meat pounder or the side of a pie pan, pound the chops to about double their diameter.
- Add salt and pepper to the chops before pounding.
- Mix eggs and milk in a shallow dish.
- Dip the pounded chops into the egg/milk mixture, then coat with bread crumbs.
- Fry the coated chops in oleo (margarine or butter) until browned on one side.
- Turn the chops over and lower the heat slightly to brown the second side.
- Cook quickly, as the thinness of the chops makes them cook fast.
- Do not overcook to keep the meat tender.
