Ingredients

  • boneless pork chops
  • 2 eggs
  • 1/4 cup milk
  • bread crumbs

Instructions

  1. If boneless chops are especially thick, cut them in half to make two chops.
  2. With a meat pounder or the side of a pie pan, pound the chops to about double their diameter.
  3. Add salt and pepper to the chops before pounding.
  4. Mix eggs and milk in a shallow dish.
  5. Dip the pounded chops into the egg/milk mixture, then coat with bread crumbs.
  6. Fry the coated chops in oleo (margarine or butter) until browned on one side.
  7. Turn the chops over and lower the heat slightly to brown the second side.
  8. Cook quickly, as the thinness of the chops makes them cook fast.
  9. Do not overcook to keep the meat tender.
