Ingredients

  • 1 lb bacon
  • 1 cup chopped onions
  • 3 tbsp margarine
  • 1/4 cup flour
  • 1/2 tsp pepper
  • 3 cups milk
  • 1/2 cup grated Parmesan cheese
  • 3 cups cooked rice
  • 2 small zucchini
  • 1 (2 1/4 oz) can sliced ripe olives
  • paprika

Instructions

  1. Fry or microwave bacon until crisp and break into small pieces.
  2. In a large pan, sauté onions in margarine.
  3. Blend in flour and pepper, then gradually add milk.
  4. Cook and stir until the mixture thickens.
  5. Stir in Parmesan cheese, bacon, cooked rice, zucchini, and olives.
  6. Pour the mixture into a lightly greased 12 x 8-inch baking dish.
  7. Sprinkle paprika on top.
  8. Bake, covered, at 375°F for 20 minutes.
  9. Remove cover and bake for an additional 10 minutes.
