Ingredients

  • 3/4 cup sugar
  • 2 eggs
  • 1 cup mashed potatoes
  • 1/2 cup sweet milk
  • 2 1/2 cups flour
  • 1 1/2 tablespoons shortening
  • 1/2 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 1 tablespoon baking powder

Instructions

  1. Beat mashed potatoes and add melted shortening, beaten eggs, and milk.
  2. Sift together flour, salt, nutmeg, and baking powder. Add to potato mixture.
  3. Mix until dough is soft, yet firm enough to roll.
  4. Divide dough into two parts and roll each to 3/4-inch thickness.
  5. Cut with a doughnut cutter and fry in deep fat at 365°F until golden brown.
  6. Drain on absorbent paper and dust with powdered sugar or cinnamon sugar.
