Ingredients

  • 2 eggs
  • 1/2 fresh firm banana
  • honey
  • butter

Instructions

  1. Saute sliced bananas in butter until light and golden on low heat.
  2. Add a teaspoon of honey to the bananas and stir lightly.
  3. Gently pour beaten eggs over the bananas in the pan.
  4. Cook until the omelet is set but not overcooked.
  5. Fold the omelet over and slide onto a serving platter.
  6. Top with sliced strawberries and a dusting of powdered sugar.
  7. Serve with muffins and coffee.
