Angolan Chicken (Galirhamuamba) features tender chicken marinated in fiery chilies, ginger, and lemon, then browned and simmered with aromatic onions, perfect for those who enjoy bold, spicy flavors.

Ingredients

  • 3 lb. chicken, cut into pieces
  • 3 to 4 chili peppers, skin removed and chopped fine
  • 1/2 tsp. ground ginger
  • 1 large onion, chopped fine
  • 3 cloves garlic
  • 1 cup lemon juice
  • 2 cups water
  • 6 Tbsp. oil
  • salt and pepper to taste

Instructions

  1. Combine chilies, ginger, oil, garlic, onions, salt, pepper, lemon juice, 1 cup water, and oil; mix well.
  2. Place chicken pieces in the marinade and marinate at room temperature for 3 hours.
  3. Remove chicken and pat dry.
  4. Strain and reserve the marinade liquid and solids.
  5. Brown the chicken in remaining oil in a skillet, adding more oil if needed.
  6. Add the solids from the marinade and cook until onions are soft but not browned.
  7. Return the chicken to the pan and add 1/2 cup of the marinade and 1 cup water.
  8. Simmer for 30 to 45 minutes until the chicken is cooked through.
