Ingredients

  • 3 cups flour
  • 2 1/2 cups sugar
  • 1 tablespoon baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon salt
  • 4 large eggs
  • 1 1/2 cups salad oil
  • 1 teaspoon vanilla extract
  • 2 cups packed shredded carrots
  • 1 (8 oz.) can chopped walnuts
  • 1/2 (2 oz.) can chunky pineapple sauce

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, combine flour, sugar, baking soda, cinnamon, and salt.
  4. Add eggs, salad oil, and vanilla extract; beat until well blended.
  5. Stir in shredded carrots, chopped walnuts, and pineapple sauce.
  6. Divide batter evenly between the prepared pans.
  7. Bake for approximately 35 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool cakes in pans for 10 minutes, then remove from pans and cool completely on wire racks.
