A tangy, sweet relish packed with onions, peppers, and green tomatoes, perfect for complementing sandwiches, burgers, or as a flavorful condiment for various dishes.

Ingredients

  • 7 onions (4 cups)
  • 1 cabbage (4 cups)
  • 10 green tomatoes (4 cups)
  • 12 green peppers (5 cups)
  • 6 red peppers (1 1/2 cups)
  • 6 cups sugar
  • 2 Tbsp. mustard seed
  • 1 Tbsp. celery seed
  • 1 1/2 tsp. turmeric
  • 4 cups vinegar

Instructions

  1. Grind first five ingredients in a blender.
  2. Put the ground mixture in a plastic dishpan.
  3. Sprinkle 1/2 cup canning salt over the mixture.
  4. Let it set overnight.
  5. Drain and rinse in a large colander.
  6. Drain well. Bring remaining ingredients to a boil.
  7. Add peppers to the boiling mixture.
  8. Boil for 5 minutes.
  9. Put the mixture into jars.
  10. Process the jars in hot water for 5 minutes.
