Ingredients

  • 2 (10 oz.) packages frozen chopped spinach
  • 1 Tbsp. dried minced onion
  • 3 Tbsp. butter or margarine
  • 1 cup herb seasoned stuffing mix
  • 1 cup grated Parmesan cheese
  • 2 to 4 drops Tabasco sauce (optional)
  • 1/4 tsp. sage (optional)
  • 2 beaten eggs

Instructions

  1. Cook spinach and dried minced onion until spinach is fully defrosted; drain well.
  2. Mix warm spinach and butter until the butter is melted.
  3. Add stuffing mix, Parmesan cheese, Tabasco sauce (if using), and sage (if using).
  4. Mix well. Stir in beaten eggs.
  5. Shape the mixture into 1-inch balls.
  6. Place on a greased baking sheet and freeze for up to 4 months, if desired.
  7. Bake frozen bites on a greased baking sheet for 15 to 20 minutes at 375°F, or bake thawed bites for 6 to 8 minutes.
