Ingredients

  • 1/2 cup butter or margarine, softened
  • 1 cup sugar
  • 2 eggs
  • 1 cup applesauce
  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 to 1 cup fresh blueberries or dry pack frozen blueberries

Instructions

  1. Grease and flour a 9 x 5-inch loaf pan.
  2. Beat together the softened butter or margarine, sugar, and eggs until well combined.
  3. Stir in the applesauce.
  4. Add the dry ingredients — flour, baking powder, baking soda, and salt — and mix only until blended.
  5. Gently fold in the blueberries.
  6. Pour the batter into the prepared loaf pan, spreading evenly.
  7. Bake at 350°F (175°C) for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove the bread from the oven and let it cool on a wire rack for 10 minutes.
  9. Remove from the pan and cool completely before slicing.
