Ingredients

  • 1 1/2 cups sugar
  • 1 1/2 cups pure vegetable oil
  • 3 eggs
  • 2 teaspoons vanilla
  • 2 cups sifted all-purpose flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups shredded carrots
  • 1 cup coarsely chopped apple
  • 1 cup golden raisins
  • 1 cup chopped pecans

Instructions

  1. Combine sugar, vegetable oil, eggs, and vanilla in a large bowl.
  2. Blend thoroughly.
  3. Sift together all-purpose flour, cinnamon, baking soda, baking powder, and salt.
  4. Add dry ingredients to the wet mixture and mix well.
  5. Stir in shredded carrots, chopped apple, raisins, and chopped pecans.
  6. Pour the batter into two greased and wax papered 9-inch cake pans.
  7. Bake at 350°F for 35 to 45 minutes, until the center of the cake is firm to touch.
  8. Cool in pans for 10 minutes.
  9. Remove from pans and cool completely on cake racks.
  10. Frost with Pecan Cream Cheese Frosting.
