Apple Carrot Cake

Ingredients
- 1 1/2 cups sugar ⓘ
- 1 1/2 cups pure vegetable oil ⓘ
- 3 eggs ⓘ
- 2 teaspoons vanilla ⓘ
- 2 cups sifted all-purpose flour ⓘ
- 2 teaspoons cinnamon ⓘ
- 1 teaspoon baking soda ⓘ
- 1 teaspoon baking powder ⓘ
- 1 teaspoon salt ⓘ
- 2 cups shredded carrots ⓘ
- 1 cup coarsely chopped apple ⓘ
- 1 cup golden raisins ⓘ
- 1 cup chopped pecans ⓘ
Instructions
- Combine sugar, vegetable oil, eggs, and vanilla in a large bowl.
- Blend thoroughly.
- Sift together all-purpose flour, cinnamon, baking soda, baking powder, and salt.
- Add dry ingredients to the wet mixture and mix well.
- Stir in shredded carrots, chopped apple, raisins, and chopped pecans.
- Pour the batter into two greased and wax papered 9-inch cake pans.
- Bake at 350°F for 35 to 45 minutes, until the center of the cake is firm to touch.
- Cool in pans for 10 minutes.
- Remove from pans and cool completely on cake racks.
- Frost with Pecan Cream Cheese Frosting.
