Apple Cider Beef Stew

Ingredients

  • 2 lb. beef, cut into 1-1/2 -inch chunks
  • 3 Tbsp. flour
  • 3 Tbsp. oil
  • 2 cups Apple cider
  • 2 Tbsp. lemon juice
  • 4 to 6 whole cloves
  • 4 to 6 whole allspice
  • 4 carrots, peeled, sliced
  • 4 potatoes, peeled, cut into squares
  • 2 onions, sliced
  • 1 stalk celery, sliced, chopped
  • 1 apple, peeled, sliced
  • 2 Tbsp. chopped parsley
  • salt and pepper to taste

Instructions

  1. Mix together flour, salt and pepper and coat beef
  2. chunks. Brown meat in heated oil. In large pot put meat with apple juice, lemon juice and seasonings. Bring to a boil. Simmer covered about 1-1/2 hours. Add vegetables and apple cider. Cook 20 more minutes or until vegetables are tender. Garnish with parsley.
