Apple Cider Beef Stew
Ingredients
- 2 lb. beef, cut into 1-1/2 -inch chunks ⓘ
- 3 Tbsp. flour ⓘ
- 3 Tbsp. oil
- 2 cups Apple cider ⓘ
- 2 Tbsp. lemon juice ⓘ
- 4 to 6 whole cloves ⓘ
- 4 to 6 whole allspice ⓘ
- 4 carrots, peeled, sliced ⓘ
- 4 potatoes, peeled, cut into squares ⓘ
- 2 onions, sliced ⓘ
- 1 stalk celery, sliced, chopped ⓘ
- 1 apple, peeled, sliced ⓘ
- 2 Tbsp. chopped parsley ⓘ
- salt and pepper to taste ⓘ
Instructions
- Mix together flour, salt and pepper and coat beef
- chunks. Brown meat in heated oil. In large pot put meat with apple juice, lemon juice and seasonings. Bring to a boil. Simmer covered about 1-1/2 hours. Add vegetables and apple cider. Cook 20 more minutes or until vegetables are tender. Garnish with parsley.
