Ingredients

  • 2 eggs
  • 3/4 cup sugar
  • 2 Tbsp vegetable oil
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups chopped peeled tart apples
  • 1 cup fresh or frozen cranberries
  • 1/2 cup chopped nuts

Instructions

  1. In a mixing bowl, beat the eggs, sugar, and vegetable oil.
  2. Combine the all-purpose flour, baking powder, ground cinnamon, baking soda, and salt.
  3. Add the dry ingredients to the egg mixture just until combined; the batter will be very thick.
  4. Stir in the chopped peeled tart apples, cranberries, and chopped nuts.
  5. Transfer the batter to greased baking pans, such as 8 x 4 x 2 inch loaves or smaller pans as desired.
  6. Bake at 350°F (175°C) for 60 to 65 minutes or until a toothpick inserted near the center comes out clean.
  7. Cool for 10 minutes before removing from the pan to a wire rack, then cool completely.
