- In a mixing bowl, beat the eggs, sugar, and vegetable oil.
- Combine the all-purpose flour, baking powder, ground cinnamon, baking soda, and salt.

- Stir in the chopped peeled tart apples, cranberries, and chopped nuts.
- Transfer the batter to greased baking pans, such as 8 x 4 x 2 inch loaves or smaller pans as desired.
- Bake at 350°F (175°C) for 60 to 65 minutes or until a toothpick inserted near the center comes out clean.
- Cool for 10 minutes before removing from the pan to a wire rack, then cool completely.
