Ingredients

  • 1 lb. leeks (white part), washed and sliced
  • 1/4 cup unsalted butter or olive oil
  • 1 (14 oz.) can chicken broth
  • 1 lb. cooking apples (McIntosh), peeled, cored and sliced
  • 1/2 lb. potatoes, peeled and sliced
  • 2 cups 2% milk or skim milk
  • 1/2 teaspoon coriander
  • white pepper to taste

Instructions

  1. Melt butter or heat olive oil in a saucepan.
  2. Add sliced leeks and cook, stirring often, for 5 to 7 minutes.
  3. Add sliced potatoes, peeled and cored apples, and chicken broth to the pan.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes until apples and potatoes are tender.
