Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups whole wheat flour
  • 1 1/2 tablespoons baking powder
  • 2 teaspoons cinnamon
  • 3/4 teaspoon salt
  • 3/4 teaspoon baking soda
  • 3 large eggs
  • 1 1/2 cups dairy sour cream
  • 6 tablespoons butter
  • 1 1/2 cups finely diced apples

Instructions

  1. In a large bowl, stir together all-purpose flour, whole wheat flour, baking powder, cinnamon, salt, and baking soda. Set aside.
  2. In a small bowl, beat eggs, sour cream, and melted butter together.
  3. Add the wet ingredients to the dry ingredients along with the diced apples and stir just until moistened.
  4. Fill well-greased muffin tins two-thirds full with the batter.
  5. Bake at 375°F (190°C) for 15 minutes or until a toothpick inserted into the center comes out clean.
