Ingredients

  • 1 1/4 c. quick or old-fashioned oats
  • 1 1/4 c. all-purpose flour
  • 1 c. finely chopped apple
  • 1/3 c. firmly packed brown sugar
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 c. milk
  • 1 egg
  • 1/4 c. vegetable oil
  • 1 Tbsp. granulated sugar

Instructions

  1. Preheat oven to 425°.
  2. Combine oats, flour, apple, brown sugar, baking powder, salt, and 1/2 teaspoon cinnamon.
  3. Add milk, egg, and oil, mixing just until dry ingredients are moistened. Fill greased muffin cups 2/3 full.
  4. Mix granulated sugar and 1/4 teaspoon cinnamon; sprinkle scant 1/4 teaspoon over each muffin.
  5. Bake for 15 to 18 minutes or until golden brown.
