Ingredients

  • 4 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons soda
  • 1 1/2 teaspoons salt
  • 2/3 cup shortening
  • 2 cups sugar
  • 3 eggs
  • 1 tablespoon orange rind, grated
  • 2/3 cup orange juice
  • 2 1/2 cups apples, grated
  • 1 1/2 cups raisins
  • 1/2 cup nuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Spray two 1-pound coffee cans with non-stick spray.
  3. In a large mixing bowl, combine flour, baking powder, soda, and salt.
  4. In a separate bowl, cream shortening and sugar until light and fluffy.
  5. Add eggs one at a time, beating well after each addition.
  6. Stir in grated orange rind and orange juice.
  7. Fold in grated apples, raisins, and nuts.
  8. Divide the batter evenly between the two prepared coffee cans, filling each about 2/3 full.
  9. Bake in the preheated oven for 50 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool slightly before removing from cans and serving.
