Ingredients

  • 2 c. flour
  • 1 Tbsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 3 packets sugar substitute
  • 1 egg
  • 3 Tbsp. corn oil
  • 1/2 c. skim milk
  • 1 c. unsweetened applesauce
  • 1/2 c. washed and drained raisins

Instructions

  1. Combine dry ingredients in a mixing bowl and mix thoroughly.
  2. Beat eggs and whip oil, milk, and applesauce together.
  3. Add dry ingredients to the liquid mixture until moistened.
  4. Add raisins and blend gently.
  5. Fill greased or paper-lined muffin tins about 2/3 full.
  6. Bake at 400°F (200°C) for 25 minutes.
  7. Remove muffins from the tin immediately after baking.
