Ingredients

  • 1 1/2 cups flour
  • 1/2 cup germ
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 1/4 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 cup peeled, chopped apple
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/3 cup chopped nuts
  • 2 tablespoons margarine

Instructions

  1. Preheat oven to 375°F and grease the bottoms of a muffin tin.
  2. In a bowl, combine flour, germ, 1/4 cup sugar, baking powder, 3/4 teaspoon cinnamon, and salt.
  3. Stir in chopped peeled apple into the dry ingredients.
  4. In another bowl, mix milk, vegetable oil, and egg until well combined.
  5. Add the wet ingredients to the dry ingredients and stir until just moistened.
  6. Fill muffin cups almost full with the batter.
  7. In a small bowl, mix remaining 1/4 cup sugar, 1/2 teaspoon cinnamon, chopped nuts, and melted margarine.
  8. Sprinkle the nut mixture over the muffin batter.
  9. Bake for 20 to 25 minutes until golden brown and a toothpick comes out clean.
