Ingredients

  • 3-4 medium sweet potatoes or yams
  • 1-2 butternut squash
  • 2-4 apples
  • brown sugar
  • cinnamon
  • nutmeg
  • butter
  • marshmallows

Instructions

  1. Spread a layer of sliced sweet potatoes, butternut squash, and sliced apples in the bottom of a buttered casserole dish.
  2. Sprinkle the layered mixture with brown sugar, cinnamon, and nutmeg.
  3. Pour melted butter over the top of the layers.
  4. Repeat layering with remaining ingredients 1 or 2 more times.
  5. Bake at 350°F (175°C) for 30 minutes.
  6. Top with mini marshmallows and bake for an additional 30 minutes, until the vegetables are tender and marshmallows are light golden brown.
