Apple Walnut Bread Pudding

Ingredients

  • 4 slices firm white bread
  • 2 tsp. melted margarine
  • 2 medium apples, chopped
  • 1/4 cup chopped walnuts
  • 2 cups low-fat milk
  • 1/2 cup cholesterol free egg product
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • 1 (4 serving size) package vanilla cook-and-serve sugar-free pudding

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Brush bread slices with melted margarine and cut into cubes. Place on a cookie sheet and bake for 10 minutes or until toasted.
  3. Place toasted bread cubes into an 8-inch square pan.
  4. Add chopped apples and chopped walnuts to the bread cubes.
  5. Toss gently to mix.
  6. In a medium bowl, beat low-fat milk, cholesterol-free egg product, and vanilla with a whisk until well blended.
  7. Add the vanilla cook-and-serve sugar-free pudding mix and 1/2 teaspoon cinnamon to the milk mixture; stir until smooth.
  8. Pour the pudding mixture over the bread, apples, and walnuts in the pan.
  9. Bake for 30 minutes or until the mixture comes to a boil.
  10. Let stand for 10 minutes before serving.
