Ingredients

  • 2/3 cup shortening
  • 2 2/3 cups sugar
  • 4 eggs
  • 2 cups applesauce
  • 3 1/3 cups flour
  • 1/2 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon cinnamon
  • optional: 2/3 cup chopped nuts

Instructions

  1. Cream together shortening and sugar.
  2. Beat in eggs, applesauce, and 2/3 cup sugar.
  3. Sift together flour, baking powder, baking soda, salt, and cinnamon.
  4. Add the dry ingredients to the applesauce mixture and mix well.
  5. Optional: Fold in 2/3 cup chopped nuts and raisins.
  6. Pour the batter into well-greased wide-mouth pint canning jars, filling only half full.
  7. Bake at 325°F for 45 minutes.
  8. Remove jars one at a time and wipe sealing edges clean.
  9. Place on lids (boiled in water) and tighten with rings.
  10. Screw lids tight and allow jars to cool; they will seal as the cake cools.
  11. Store as you would regular canned goods or give as a gift.
