Ingredients

  • 6 medium tomatoes
  • 2 c. cottage cheese
  • 1/4 c. mayonnaise
  • 3 Tbsp. chopped pickles
  • 1 Tbsp. minced onion
  • 3 Tbsp. chopped pimento
  • 3 Tbsp. chopped nuts

Instructions

  1. Peel tomatoes, cut slices from the top, and scoop out the center. Sprinkle the inside with salt and chill.
  2. Combine cottage cheese, mayonnaise, chopped pickles, minced onion, chopped pimento, and chopped nuts. Mix well.
  3. Fill the tomato cups with the prepared cheese mixture.
  4. Chill thoroughly before serving.
  5. Serve on a bed of lettuce.
